Instead of using pterodactyl meat, I am using ground turkey.
The ingredients:
- 1 pound ground turkey
- 1 can of chickpeas (drained)
- 1 cup frozen peas
- 5 or 6 carrots (chopped)
- 1 medium onion (chopped)
- 1 teaspoon cumin
- 1/2 teaspoon ground chipotle powder
- 1/2 teaspoon curry powder
- 2 teaspoons minced garlic
- salt and pepper
- 1 tablespoon olive oil
- 1 can tomato paste
- 1 can beef broth
Directions:
1. Brown ground meat in pan, drain, and put aside
2. In stock pot, heat olive oil at medium high
3. Add the onions and carrots and cook for 5 minutes
4. Add the ground meat, garlic, spices and cook for 5 minutes
5. Add the beef stock, tomato paste, chickpeas, and peas
6. Bring to a low boil, then reduce heat to low and simmer for 20 minutes
7. Serve with rice
8. Leftovers are good to go (click below to see enlarged texture).
